On the southern part of the appellation, with the following plots: Pied-Redon Vieilles Vignes
0.82ha (44.04758, 4.8645) and Boucou 0.70ha (44.05557, 4.84359),
on sandy loam red soil with rounded pebbles.
The picking, entirely manual, is followed by systematic sorting in the vineyard. The estate has been certified organic since the 2012 vintage.
Traditional with complete destemming. Grapes are vinified in a thermo-regulated stainless-steel tank (max 30°C). During the alcoholic fermentation 3 releases are done with a pump over twice a day. The wine settles 26 days under marc to enhance the extraction.
After devatting, the malolactic fermentation is made in stainless steel tanks and then the wine is put in oak demi-muids (600L cask) for 12 months. Bottling is made at the estate.
