This new cuvée was created in 2006. It was born of a desire to respect the exceptional terroir of a plot of very old vines, located in La Gardiole aera (Les Sables and Le couchant). This terroir, with its sandy soil, gives this cuvée, with its small grains of tannin and silky touch, outstanding aromatic potential, great finesse and elegance.
The picking, entirely manual, is followed by systematic sorting in the vineyard and after on a sorting table in the cellar.
Traditional with complete destemming. The totality of the fermentation takes place in stainless steel tank. The temperatures are controlled throughout the alcoholic fermentation. Pumping over 1 or 2 times a day along with 3 or 4 “délestages” during the fermentation. Long vatting from 3 to 4 weeks. A daily tasting of the tank takes place in order to determine the date of devatting.
Exclusively in stainless steel during 12 months for keeping fruity aromas.
